While around $1 is fine, anything over $1.50 makes me pause, and prices exceeding $2 mean I won’t even go near them! Thankfully, bell peppers are currently on sale at a great price, allowing me to buy them freely at the mart. This is the best time to enjoy delicious bell pepper dishes! So, today I made a bell pepper dish: a bell pepper pizza. This pizza contains absolutely no flour; instead, I’ve filled fresh bell peppers with various mushrooms and vegetables, making it a light and satisfying meal. Let me share how to make this delightful bell pepper pizza right away.

Ingredients

  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 potato (medium-sized)
  • 1/2 onion
  • 4 button mushrooms
  • 6 cherry tomatoes
  • 4 strips bacon
  • 100g sweet corn (canned)
  • 200g tomato sauce
  • 20 slices black olives
  • 200g mozzarella cheese
  • 3 Tbsp cooking oil
  • 1 pinch parsley flakes (for garnish)

First, wash the yellow and red bell peppers thoroughly. Then, cut them in half lengthwise and carefully remove the seeds and white pith. This prepares them perfectly for stuffing.

Peel the onion and dice it into small, uniform cubes, about 0.3cm x 0.3cm. Cutting them small ensures a pleasant texture when cooked.
