- 1/2 can Spam (or to taste)
- 1-2 eggs
Cooking Instructions
Step 1
First, wash and prepare all the ingredients for the rice bowl. Slice the Spam into bite-sized pieces (about 1cm thick). You can also prepare fried or scrambled eggs to serve alongside.
Step 2
Slice the eggplant into half-moons or thick slices, about 1cm thick. Slice the zucchini similarly, and for thicker zucchini, cut them in half lengthwise before slicing to make them easier to grill. Ensure the vegetables aren’t too thick so they cook through nicely and have a good texture.
Step 3
Place the sliced zucchini and eggplant in a heated, dry pan. Sprinkle a pinch of salt and pepper over each vegetable. This step enhances the natural sweetness and savory flavor of the vegetables.
Step 4
Add the sliced cabbage to the pan. Season lightly with salt and pepper. Cabbage cooks quickly, so aim to grill it just until it starts to wilt for the best texture.
Step 5
Grill the cabbage, eggplant, and zucchini on both sides until they are golden brown and tender. Slightly browning the edges will concentrate their sweetness and flavor. This grilling process removes excess moisture, making the vegetables more flavorful.

In a separate pan, or after cleaning the first one, cook the Spam until golden brown on both sides. The rendered fat from the Spam adds extra deliciousness. Once grilled, slice it into your desired pieces.

Julienne the onion and thinly slice the carrot. Heat a small amount of brown rice oil (or cooking oil) in a pan and stir-fry the julienned onion and carrot over high heat until the onion becomes translucent. Stir-frying quickly brings out their sweetness.

Combine the grilled cabbage, eggplant, zucchini, stir-fried onion and carrot, and grilled Spam in a large bowl or pan. Drizzle with 1 to 3 tablespoons of All-Purpose Soy Sauce and gently toss everything together until well combined. Taste and adjust the seasoning as needed.
Step 9
Carefully pour the beaten eggs over the mixed ingredients in the pan. Reduce the heat to low, cover the pan, and let the eggs cook until they are set and tender. For a richer taste, aim for a soft-boiled consistency.
Step 10
Serve the prepared Spam and grilled vegetable mixture over a bowl of warm rice. For added flavor, mix the rice beforehand with 1/2 tablespoon of All-Purpose Soy Sauce and 1/2 tablespoon of perilla oil. This creates a delicious and satisfying Spam and grilled vegetable rice bowl!
