  • Korean chili peppers 3 pcs (adjust to spice preference)

First, let’s prepare the filling for the rice rolls. Finely dice the tricolor bell peppers after removing the seeds. Mince the Korean chili peppers similarly. If you prefer less spicy food, feel free to adjust the amount of chili peppers or omit them entirely.

Heat a frying pan with a little cooking oil over medium-low heat. Add the minced bell peppers and chili peppers, along with a pinch of salt. Stir-fry until the vegetables are softened and slightly sweet. This process brings out their natural sweetness.

Now, let’s prepare the second filling component: the eggs. Crack 2 eggs into a bowl, add a pinch of salt, and whisk them thoroughly. Use a fork to beat them until the yolks and whites are well combined.

It’s time to season the rice. In a large bowl, place 1 bowl of warm cooked rice. Add salt, ground sesame seeds, and sesame oil. Then, incorporate the stir-fried vegetables prepared earlier. Gently mix everything together with a spatula or spoon, being careful not to mash the rice grains. Once mixed, shape the rice into small, compact balls, about bite-sized.

Finally, we’ll wrap and cook the rice rolls with the duck. Lightly grease a frying pan with cooking oil and preheat it over medium-low heat. Cut the smoked duck breast into manageable pieces. Wrap each shaped rice ball with a piece of duck breast. Then, dip the duck-wrapped rice ball lightly into the beaten egg mixture, allowing excess to drip off. Carefully place the roll seam-side down onto the hot pan and cook until golden brown. Be mindful of the heat to prevent the duck from burning, flipping occasionally to ensure even cooking.
