Musam Mari Rolls

  • 1 pack Smoked Duck
  • 1 Yellow Bell Pepper
  • 1 pack Radish Sprouts
  • 1 Cucumber
  • 1 Carrot
  • 1 pack Pickled Radish Wrappers (Ssam Mu)
  • 1/3 bunch Chives
  • 1 Red Bell Pepper

Mustard Dipping Sauce

  • 3 Tbsp Prepared Mustard (Yeon Gyeoja)
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Minced Garlic
  • 4 Tbsp Oligodang (Korean Corn Syrup)
  • 5 Tbsp Vinegar

Cooking Instructions

Wash the chives thoroughly. Bring a pot of water to a boil with a pinch of salt, add the chives, and immediately turn off the heat. Quickly shock them in an ice bath or cold running water, then gently squeeze out excess water. These will be used to tie the rolls together.

Cut the carrot, cucumber, and bell peppers into long, bite-sized strips, about 0.5 cm thick. We want a nice crunch! Rinse the radish sprouts under cool water and drain them well. With all the vegetables prepped, the preparation is almost complete.

Lightly pan-fry the smoked duck slices in a skillet over medium heat until they are lightly golden. If the pieces are large, cut them in half for easier rolling. Let them cool slightly. While you could also use seasoned pork or beef, smoked duck offers a convenient and delicious shortcut.

If using store-bought pickled radish wrappers (Ssam Mu), drain any liquid and gently press them with your hands to remove excess moisture. Be careful not to squeeze too hard, as they can tear. (Tip: If you prefer to make your own, thinly slice radishes and brine them in a mixture of vinegar, salt, and sugar.)

Lay a pickled radish wrapper flat on a plate. Arrange the prepared ingredients – radish sprouts, carrot, cucumber, bell peppers, and smoked duck – across one half of the wrapper, slightly overlapping. I find it easiest to place the radish sprouts first. Fold the wrapper over the filling like tucking in a baby, then use a blanched chive strand to tie around the middle, securing the roll. Ta-da! Your Musam Mari is complete. So simple!

Now, let’s prepare the zesty mustard dipping sauce. In a bowl, combine 3 tablespoons of prepared mustard, 3 tablespoons of soy sauce, 2 tablespoons of minced garlic, 4 tablespoons of oligodang (or honey/corn syrup), and 5 tablespoons of vinegar. Whisk everything together until well blended and smooth. This tangy sauce is the perfect complement to the fresh rolls. Give it a good shake!
