First, prepare the main ingredient: the potatoes. Peel 3 fresh potatoes, ensuring they are about the size of an adult woman’s fist. Also, peel 1 medium onion and cut it to a similar size as the potatoes. Prepare 1/3 of a carrot for julienning.

Once peeled, julienne the potatoes thinly. Aim for uniform thickness so they cook evenly. After julienning, rinse the potato strips under cold running water 2-3 times to remove excess starch. This step is crucial to prevent them from sticking together when stir-fried and results in a cleaner texture. Drain them thoroughly in a colander.

Julienne the onion and carrot thinly, matching the thickness of the potato strips. Having all vegetables similarly cut will ensure they cook at the same rate and create a visually appealing dish.
