Whip up a delicious egg pancake using leftover pink sausage, fresh seasonal spinach, and sweet carrots. It’s simple to make and perfect as a special side dish for picky eaters who dislike vegetables. It’s nutritious, visually appealing, and will brighten up your dining table.
Main Ingredients- Pink Sausage 200g
- Fresh Spinach 130g
- Carrot 1/3 medium
- Fresh Eggs 6 large
Seasoning & Others- Olive Oil 3-4 Tbsp
- Salt 2 pinches (approx. 1/4 tsp)
- Black Pepper, a tiny pinch

Cooking Instructions
Step 1
First, finely dice the pink sausage into small pieces, about 0.5cm. Avoid chopping it too finely so that the sausage retains a pleasant texture when bitten into.
Step 2
Thoroughly wash the spinach under running water, drain well, and then chop it finely, including the stems, to about 0.5cm size. This will preserve the fresh flavor of the spinach.
Step 3
Peel the carrot and dice it very finely. Combine the minced pink sausage, spinach, and carrot in a bowl and mix them thoroughly.
Step 4
In a separate bowl, crack the 6 eggs. Add the 2 pinches of salt and a tiny pinch of black pepper. Whisk the eggs vigorously with a whisk until well beaten. Then, mix this egg mixture with the prepared vegetables. Adjust the salt to your taste.
Step 5
I used a 2-cup egg frying pan, but a regular small frying pan works just fine. Preheat the pan over low heat and add 1-2 tablespoons of olive oil. Gently swirl the pan to coat the bottom evenly with oil. Cooking over low heat is key to ensuring the pancake cooks through without burning.
Step 6
Using a ladle or spoon, pour about 2-3 tablespoons of the egg mixture onto the preheated pan, spreading it into a thin, round shape. Once the edges start to set slightly, gently loosen the edges with the back of your spoon to help it release easily. This prevents the pancake from breaking when flipping.
Step 7
When one side is golden brown and cooked, carefully flip the pancake over. After flipping, gently press down on the center of the pancake with your spoon to ensure it cooks evenly all the way through. Continue to cook for another 1-2 minutes on each side until both sides are golden brown and appetizing. Your delicious pink sausage, spinach, and egg pancake is now complete!
