Meringue Pepero Core Ingredients- 2 large egg whites (approx. 75-80g)

Cooking Instructions
Step 1
In a large, clean bowl, add the 2 egg whites. For large eggs, this should be around 75-80g. Add 2g of fresh lemon juice to help stabilize the meringue and reduce any eggy smell. Whisk lightly to combine.
Step 2
Measure out 100g of granulated sugar and set it aside. You’ll be adding this in stages while whipping the egg whites, so having it ready makes the process smoother.
Step 3
Begin whipping the egg whites using an electric mixer on a medium speed (around speed 3). After about 30 seconds to 1 minute, you’ll see frothy white bubbles starting to form.
Step 4
Once the initial foam appears, start adding the granulated sugar gradually, in three separate additions. Add the first portion of sugar and whip for about 30-50 seconds before adding the second portion. Repeat this process for the third addition of sugar.
Step 5
After adding all the sugar, continue whipping until you achieve stiff, glossy peaks. This usually takes about 5 minutes. The meringue should be thick and hold its shape. When you lift the beaters, the peaks should stand straight up. For a smoother texture, reduce the mixer speed to low (speed 1) and whip for another 30 seconds to 1 minute to stabilize the meringue.
Step 6
Divide the finished meringue into five separate small bowls. Add a small amount of food coloring to each bowl, according to your desired colors. Gently fold the color into the meringue until evenly distributed.
Step 7
Prepare your baking sheet by lining it with parchment paper or a silicone mat. Arrange the cookie sticks on the prepared sheet, leaving a little space between them.

Transfer the colored meringues into piping bags (or use a spoon). Carefully pipe or dollop the meringue onto each cookie stick, covering about half to two-thirds of the stick. Get creative with patterns or simple swirls!

While using different piping tips can create varied designs, don’t worry if the colors blend a bit when piping multiple colors at once. The multi-colored effect itself is charming! Even without fancy tips, a spoon can create lovely textures.

For an extra touch of sparkle, sprinkle your colorful meringues with assorted sprinkles! If you don’t have sprinkles, you can skip this step or get creative with crushed pretzels or small chocolate chips for added texture and flavor.

The key to perfect meringue cookies is the baking temperature and time. Preheat your oven to 90-100°C (194-212°F). Be cautious not to exceed 100°C, as this can cause the meringues to brown too much. Bake for approximately 1 hour and 30 minutes. While the baking process takes time, the preparation is quite simple!

Once baking is complete, let the meringues cool completely in the oven or on the baking sheet before attempting to remove them. Trying to pull the sticks out while warm can cause them to break. Gently lift the parchment paper or silicone mat to help the meringues release naturally once they are fully cooled.
