Ingredients- Korean Beef (ground or finely chopped) 200g
- Tteokbokki Rice Cakes 20 pieces
- Onion (finely chopped) 1/2
- Soy Sauce 3 tsp
- Cheongju (Korean rice wine) 1 tsp
- Minced Garlic 1 tsp
- Honey or Brown Sugar 1 tsp
- Black Pepper approx. 0.3 tsp
- Sesame Oil 0.5 tsp
- Sweet Rice Flour 2 tsp
- Pine Nuts or Ground Peanuts (for garnish) a pinch
Cooking Instructions
Step 1
The secret to great Tteokgalbi lies in the quality of beef! Using Korean ‘Yukwoo’ (beef cattle raised for meat, distinct from Hanwoo but from the same system) provides a tender texture and lean meat, thanks to being processed around 20 months of age. You can ask your butcher to grind it for Tteokgalbi or chop it finely at home. Chopping it yourself with a knife adds a satisfying chewiness, enhancing the overall texture. ^^*
Step 2
In a large bowl, combine the ground beef with all the seasoning ingredients. Add 3 tsp soy sauce, 1 tsp Cheongju, about 1/2 of a finely chopped onion, 1 tsp minced garlic, 1 tsp honey or brown sugar, a pinch of black pepper, 0.5 tsp sesame oil, and 2 tsp sweet rice flour.
Step 3
Now, the crucial step: knead the mixture thoroughly with your hands until it becomes well combined and develops a sticky, cohesive texture. This ensures the flavors meld perfectly and creates a delicious Tteokgalbi. Knead it with the same care you would use for making mochi!
Step 4
Prepare your colorful Tteokbokki rice cakes. If they feel hard, briefly blanch them in warm water until softened. Lightly dust the softened rice cakes with a little sweet rice flour; this helps the meat mixture adhere better. Wrap each rice cake with a portion of the meat mixture, ensuring an even, not-too-thick layer. Avoid pressing too tightly so the rice cake can cook properly.
Step 5
Heat a lightly oiled pan over medium-low heat. Place the shaped Tteokgalbi onto the pan. Cook, turning frequently to prevent burning, until the meat is cooked through. You can tilt the pan and spoon some of the hot oil over the Tteokgalbi to keep them moist.
