Main Ingredients

  • 8 Quail eggs
  • 2 sheets Grilled fish cakes
  • 1/2 King oyster mushroom
  • 2 sticks Imitation crab meat (or crab sticks)
  • 2 Frankfurters

Batter & Seasoning

  • 1 tsp Sesame oil
  • 2 Tbsp Pancake mix (Korean ‘buchim garu’)
  • 2 Eggs

Cooking Instructions

Step 1

First, prepare all the ingredients for your skewers meticulously.
– Boil and peel the quail eggs. Then, gently toss them with 1 tsp of sesame oil for a subtle, nutty flavor enhancement.
– Cut the frankfurters into three equal pieces for easy handling and skewering.
– Slice the grilled fish cakes into four portions, making them suitable for threading onto skewers.
– Dice the king oyster mushroom into pieces that will fit comfortably inside the folded fish cakes. The leftover mushroom tips can be used for decorative purposes on the skewers; try to cut them to a similar size as the quail eggs for a cohesive look.

Step 1

Step 2

Now it’s time to assemble the skewers! Take a piece of grilled fish cake, then insert a good portion of the shredded imitation crab meat (or crab sticks) and some diced king oyster mushroom inside.

Step 2

Step 3

Fold the fish cake in half or roll it up, and then thread it onto a skewer. Ensure the mushroom and crab meat are evenly distributed inside the fish cake; this will also help encourage picky eaters to try them! Secure everything tightly with the skewer so the ingredients don’t fall out.

Step 3

Step 4

Once all the ingredients are on the skewers, it’s time to coat them. First, lightly coat each skewer with the pancake mix, ensuring it covers all sides. Next, prepare the egg wash by whisking the 2 eggs in a bowl. Dip the coated skewers into the egg wash, making sure they are fully covered.

Step 4

Step 5

Heat about 2 Tbsp of cooking oil in a pan over low heat. Place the prepared skewers in the pan, leaving some space between them so they don’t stick together. Use a spoon or tongs to gently flip the skewers as they cook, which helps prevent them from breaking apart and ensures even browning. Cook until both sides are golden brown.

Step 5

Step 6

Once they are golden brown on both sides, your delicious fish cake skewer pancakes are ready! They taste best served warm. These make a wonderful addition to kids’ lunchboxes or a special treat for any occasion!
