Main Ingredients- Carrot Raffe 200g
- Gimbap seaweed sheets 5 pcs
- Warm cooked rice 2 servings (approx. 400g)
- Sesame oil 1-2 Tbsp (to taste)
- Plum extract 1 Tbsp
- Salt for rice seasoning
- Fresh chives 100g
- Eggs 3 pcs
- Salt for egg mixture
- Water 3 Tbsp for egg mixture
- Brown rice oil or cooking oil, for pan-frying eggs
- Pickled radish slices (as needed)
Cooking Instructions
Step 1
Carefully trim any yellow or wilted leaves from the fresh chives and wash them thoroughly under running water. After washing, drain them well on a colander to remove excess moisture; this prevents the gimbap from becoming soggy.

Use the prepared carrot raffe as is. It will add a crisp and refreshing texture.

Now, let’s make the egg omelet. In a bowl, crack the 3 eggs. Add a pinch of salt and 3 tablespoons of water, then whisk well. (Optional: a little parsley flakes can be added for extra flavor and color.) Heat a non-stick pan over medium heat and lightly coat it with brown rice oil or cooking oil. Pour the beaten egg mixture evenly into the pan and cook slowly over low heat until set. Once cooked, let the egg omelet cool slightly, then slice it into long, thin strips suitable for filling gimbap.

The pickled radish slices will add a lovely tanginess to your gimbap. Slice them to a suitable length and thickness. Avoid slicing them too thick, as this can cause the gimbap roll to break when cutting.

Seasoning the rice is key to delicious gimbap! In a bowl, lightly salt the warm cooked rice. Add 1 tablespoon of plum extract for a touch of sweetness and a glossy sheen. Finally, drizzle in 1-2 tablespoons of sesame oil for a rich, nutty aroma. Gently mix with a spatula, being careful not to mash the rice grains, ensuring the seasoning is evenly distributed.
Step 6
It’s time to roll the gimbap! Place a sheet of gimbap seaweed, rough side up, on a bamboo rolling mat. Spread the seasoned rice thinly over the seaweed, leaving about 1-2 cm of the top edge bare. This bare edge will help seal the roll. Arrange your fillings attractively on top of the rice: the carrot raffe, the sliced egg omelet, the drained chives, and the sliced pickled radish. Be mindful not to overfill, as this can cause the gimbap to unravel when rolled.
Step 7
Now, let’s roll the gimbap tightly. Using the bamboo mat or your hands, begin rolling from the bottom edge, pressing firmly to create a compact roll. Gently tuck the fillings in as you roll. Lightly moisten the top bare edge of the seaweed with a little water to help seal the roll securely. Once rolled, you can wrap the gimbap in the mat again to firm its shape. Slice the roll into bite-sized pieces, about 1.5-2 cm thick. For an extra touch, brush a little sesame oil over the cut surfaces of the gimbap before serving.
