It’s typically served over rice as a Japanese rice bowl, or ‘donburi’. For my diet-friendly version, I’ve skipped the rice and created a vibrant 4-color soboro. This dish is not only visually appealing and delicious but also incredibly simple to make at home using whatever vegetables you have on hand. It’s a beautiful and tasty way to enjoy a light meal. Ingredients- 300g ground beef
- 1 cucumber
- 110g carrot
- 3 eggs
- 1 Tbsp soy sauce
- 2 Tbsp olive oil
- Pinch of salt
- Pinch of black pepper

Step 1
Start by washing the cucumber thoroughly. Peel it, then cut it into neat, bite-sized cubes. Make sure to remove the seeds from the cucumber. Next, peel and wash the carrot, then dice it into pieces of similar size to the cucumber. Cutting all the vegetables into uniform pieces will help them cook evenly.
Step 2
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the diced carrots and stir-fry until they soften and their natural sweetness is released. Add a pinch of salt and continue to cook until any excess moisture evaporates. For the cucumber, add a little more olive oil to the pan if needed. Add the diced cucumber and a pinch of salt. Stir-fry until the cucumber is tender but still holds its shape; avoid overcooking, as it can become mushy.
Step 3
In a separate bowl, crack the 3 eggs and whisk them lightly until the yolks and whites are combined. Heat a non-stick pan over low to medium-low heat. Pour in the whisked egg mixture and scramble it quickly. Aim for soft, fluffy curds. If you’re not fast enough, it might turn into an omelet-like layer, but don’t worry, it will still taste great! It seems mine turned out a bit thicker, but the flavor is always delicious!

Wipe the same pan you used for the eggs clean with a paper towel. Add the ground beef to the pan. Season with a pinch of black pepper to help remove any gamey odors, and add 1 tablespoon of soy sauce for flavor. Stir-fry the beef, breaking it up with your spoon to ensure it cooks evenly. Cooking over medium-high heat will help seal in the juices.
