Cooking Instructions

Step 1

First, prepare all the rice flour doughs by gradually adding warm water and kneading them (called ‘ik-banjuk’ in Korean). The ideal dough consistency should be soft and pliable, similar to the softness of an earlobe when touched. Adjust the water amount carefully to avoid making the dough too sticky or too dry.

In separate bowls, add the dry rice flour and your desired natural powders (strawberry, purple sweet potato, sweet pumpkin, green tea powder). Gradually add water and knead until you have smooth, colorful doughs. Each color will create a beautiful base for your songpyeon.

For the songpyeon filling, mix the sesame seeds with honey until they form a cohesive lump. Binding the filling with honey prevents it from bursting out of the songpyeon during cooking, ensuring a neat finish.

Lightly grease the inside of your songpyeon molds with sesame oil to prevent the dough from sticking. Take a portion of each colored dough, place it inside the mold, add the prepared filling, and press firmly to create the shape. Push down securely to get a clear impression.

Tip: If you want to create beautiful flower-shaped songpyeon, similar to Wagashi (Japanese sweets), you can roll out the dough thinly and cut it with a flower-shaped cutter, or gently press patterns onto round dough balls using a spoon or fork for a more unique look.

To remove the songpyeon from the mold, gently press the edges of the mold or push from the opposite side to release the perfectly shaped rice cakes without distortion.

Steam the songpyeon in a preheated steamer for about 20 minutes. After steaming, turn off the heat and let them rest (‘ddeumdeuligi’ in Korean) for 5 minutes. This allows them to become moist and tender all the way through.

After removing from the steamer, you can brush a little sesame oil on the songpyeon for a glossy finish, or briefly rinse them in cold water and pat dry. This method makes the exterior chewier and adds a lovely sheen. Choose the method you prefer.
