Japchae Ingredients- 250g glass noodles
- 1 onion
- 1 pack oyster mushrooms
- 1 carrot
- 1 bunch spinach
Japchae Seasoning- 3 Tbsp soy sauce
- 4 Tbsp corn syrup
- 4 Tbsp sugar
- Pinch of black pepper

Cooking Instructions
Step 1
Trim and wash the spinach thoroughly. Bring a pot of water to a boil, add 1 Tbsp of salt, and blanch the spinach for about 30 seconds to 1 minute. Be careful not to overcook it, as it will become mushy.
Step 2
Immediately rinse the blanched spinach under cold running water to stop the cooking process. Gently squeeze out excess water. Season with a pinch of salt and lightly mix to retain its fresh flavor.
Step 3
Slice the onion into thick strips. Heat a generous amount of cooking oil in a pan over medium heat. Add the sliced onions and sauté with a pinch of salt until they become translucent and release a sweet aroma.
Step 4
Julienne the carrot. Add a little cooking oil to a pan and stir-fry the carrots briefly. Season with salt. Ensure you don’t overcook them to maintain their crisp texture.

Trim the tough ends of the oyster mushrooms and halve any large ones. Blanch them in boiling water for about 1 minute, then rinse under cold water and squeeze out the excess moisture. Sauté the blanched mushrooms in a pan with a little cooking oil and season lightly with soy sauce to enhance their flavor.
Step 6
Now, let’s prepare the sauce for the glass noodles. In a pan or pot, combine 3 Tbsp soy sauce, 4 Tbsp corn syrup, and 4 Tbsp sugar. Bring to a boil over medium heat until it bubbles vigorously. This creates a glossy and flavorful sauce.
Step 7
In a large pot, boil plenty of water and cook the glass noodles for about 8 minutes. Drain the cooked noodles thoroughly and immediately add them to the pan with the prepared sauce while they are still hot. Use tongs to toss the noodles continuously, allowing them to absorb the sauce and slightly reduce.
Step 8
Once the noodles have absorbed the sauce well and are slightly reduced, sprinkle in some black pepper for added aroma. Taste and adjust the seasoning with salt if needed. Proper seasoning is key to delicious Japchae.

Add the sautéed carrots, oyster mushrooms, and onions to the reduced noodles. Mix everything gently to combine. Finally, add the pre-seasoned spinach and 1 Tbsp of sesame oil. Toss lightly to incorporate without breaking the ingredients.
