Summer’s bounty, perilla leaves, are known for their detoxifying properties, while konjac, rich in dietary fiber, offers a satisfying fullness that curbs overeating, making it a quintessential diet food. Codari, on the other hand, is packed with high-quality protein in the form of collagen. You might find this combination unexpected, but it’s a remarkably delicious ‘rice thief’ that will have you reaching for seconds. In times of scarcity, rich and protein-heavy foods were prized for special occasions. However, nowadays, fatty foods are often avoided. Unlike fats or carbohydrates, excess protein is not stored in the body but is excreted, placing no burden on the kidneys and leaving no surplus. Therefore, consuming just the right amount is actually a way to nourish your body.

Main Ingredients

  • 1 Codari (dried pollack), prepared
  • 500g Konjac jelly
  • 1 Onion (medium size)
  • Perilla leaves (as desired, generously)
  • 5-6 Stalks of green onion or scallions

Seasoning Sauce

  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Maesilcheong (Plum extract) (1 Tbsp Maesilcheong + 1 Tbsp corn syrup/honey)
  • 1 Tbsp Guk-ganjang (Soup soy sauce)
  • 1 Tbsp Jin-ganjang (Soy sauce for general use)
  • 1/4 tsp Minced ginger
  • 1 Tbsp Minced garlic
  • 2 Tbsp Cheongju (Rice wine)
  • 1/2 Tbsp Sesame oil
  • 1 Tbsp Honey / Corn syrup / Oligosaccharide
  • 1 cup Water (approx. 200ml)

Cooking Instructions

1. Cut the konjac into finger-sized pieces. It doesn’t need to be pre-boiled. 2. Trim the fins and tail of the codari with scissors. You can save the head for making broth later if you wish. If using pre-cut codari, simply rinse it. 3. Roughly chop the onion into large, chunky pieces.

In a bowl, combine all seasoning sauce ingredients EXCEPT for the water. Mix well with a spoon to create the sauce. Preparing the sauce beforehand ensures even seasoning distribution and saves cooking time.

In a heavy-bottomed pot or pan, arrange the prepared codari, cut konjac, and chopped onion. Generously ladle the prepared seasoning sauce over the ingredients, ensuring they are well-coated.

Pour in 1 cup of water, gently around the edges of the pot. Turn the heat to high and cover the pot completely. This will help the ingredients cook quickly and absorb the flavors.

After about 5 minutes, the stew should begin to boil. You’ll hear a gentle bubbling sound, indicating it’s time for the next step.

Once boiling, slightly ajar the lid, leaving a small gap for steam to escape. Reduce the heat to medium and let it simmer uncovered for about 20 minutes. This allows the codari and konjac to absorb the delicious flavors as the sauce reduces.

While the codari stew is simmering, prepare the fresh garnishes. Roughly chop the green onions into 3-4 cm lengths. Wash the perilla leaves, pat them dry, stack them, roll them up, and thinly slice them into shreds. The fragrant perilla leaves will add a wonderful aroma to the dish.

Check the codari stew after 20 minutes of simmering. If the sauce has reduced nicely, scatter the chopped green onions and shredded perilla leaves over the top. Turn off the heat immediately. The residual heat will continue to cook them gently.

Cover the pot again and let it steam for 5 to 10 minutes. This resting period allows the perilla leaves’ aroma to infuse throughout the stew, and the green onions will become tender.
