  • 1 bunch garlic scapes (approx. 150g)
  • 500g shelled cockles
  • 2 Tbsp salt (for blanching garlic scapes)

Spicy and Sweet Seasoning

  • 3 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili flakes, adjust to spice preference)
  • 8 Tbsp soy sauce
  • 4 Tbsp oligo syrup (adjust sweetness)
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • A pinch of sesame seeds (for added nuttiness)

Cooking Instructions

Once the water is boiling, add the prepared garlic scapes and blanch them very briefly, just until they turn a vibrant green, for about 10-20 seconds. Be careful not to overcook them, or they will become mushy! Immediately rinse the blanched garlic scapes under cold water to cool them down. Drain them completely and cut them into bite-sized pieces (about 3-4 cm long). Next, wash the cockles with shells by scrubbing them vigorously with coarse salt to remove any dirt or grit. Then, add enough water to cover the cockles and boil them. Once the cockles start to open their shells, turn off the heat immediately. Drain them in a colander to remove excess water.

Carefully remove the cockle meat from their shells. Rinse the extracted cockle meat lightly under running water to remove any residual impurities. Drain them thoroughly in a sieve to ensure they are completely dry.
