Cloud Bread Ingredients

  • 3 large egg whites
  • 10g cornstarch (about 2 tsp)
  • 30g granulated sugar (about 2 Tbsp)
  • Food coloring as needed (choose your favorite colors)

In a clean bowl, add the 3 egg whites. Using an electric mixer on low speed, whip until foamy. Gradually increase the speed to medium and continue whipping until soft peaks form (about 70% meringue stage – the peaks will gently curl over).

Gradually add the 30g of granulated sugar, about 1 tablespoon at a time, while continuing to whip. Sift the 10g of cornstarch to ensure it’s fine and lump-free.

Once all the sugar is incorporated, increase the mixer speed to high and whip until stiff, glossy peaks form (the meringue should hold its shape firmly and not droop when the bowl is inverted). Add a few drops of your chosen food coloring and gently fold it in until evenly distributed. Be careful not to overmix after adding the color.

Line a baking sheet with parchment paper. Carefully spoon mounds of the meringue mixture onto the prepared baking sheet, shaping them into desired round forms. Aim for a slightly thick, cloud-like shape rather than flattening them too much.

Bake in a preheated oven at 150°C (300°F) for 30 minutes. Avoid opening the oven door frequently during baking. Once baked, remove the cloud bread from the oven and let it cool slightly on a wire rack before enjoying its delightful texture.
