  • 500g Bean Sprouts
  • 5 pieces Dried Kelp (approx. 10cm x 10cm each)
  • 2/3 cup Squid (cleaned and prepared)
  • 1 Green Onion
  • 2-3 Korean Green Chilies (Cheongyang peppers)
  • 1 Tbsp Red Pepper Flakes (Gochugaru)
  • 2 tsp Salt
  • 2 Tbsp Salted Fermented Shrimp (Saewujeot)
  • 2 Tbsp Soup Soy Sauce (Guk-ganjang)
  • 1 Tbsp Minced Garlic
  • 2L Water

Cooking Instructions

Step 1

In 2L of water, add 5 pieces of dried kelp and bring to a boil over medium heat.

Once the water starts to boil, reduce the heat to low and simmer for 5 more minutes to infuse the broth. Then, remove the kelp. (Be careful not to boil the kelp for too long, as it can release a bitter taste.)

Add 2 tsp of salt and increase the heat back to high, bringing the broth to a rolling boil.

Add the washed bean sprouts and the squid, cut into bite-sized pieces. Cook for 5 minutes. It’s best not to overcook the bean sprouts to maintain their crispness.

Add 2 Tbsp of salted fermented shrimp. This ingredient is crucial for adding a deep savory flavor to the broth.

Add 2 Tbsp of soup soy sauce to adjust the color and saltiness of the broth.
