Main Ingredients

  • Periwinkles (Oelgaeng-i/Godi) – about 1 handful
  • Chives – 1 handful
  • Water – 6 cups (approx. 1.2L)

Seasoning

  • Minced garlic – 1 Tbsp
  • Salt (or Korean soup soy sauce) – 1/2 Tbsp (adjust to taste)
  • Oyster sauce – 2 Tbsp

Cooking Instructions

Step 1

First, prepare the periwinkles. Rinse them thoroughly under running water several times to remove any shells or impurities. Scrubbing them gently will ensure they are extra clean.

Pour 6 cups (about 1.2L) of clean water into a deep pot. Bring the water to a boil over high heat. Wait until the water is vigorously boiling.

Prepare the minced garlic, which is 1 tablespoon. Using fresh garlic will enhance the depth of flavor in the soup.

Cut the chives into approximately 5cm lengths. You’ll need about one handful. The chives are added towards the end to preserve their fresh aroma and crisp texture.

Once the water is boiling rapidly, add the prepared periwinkles and boil for about 2 minutes. Cooking them for too long can make the periwinkles tough, so timing is key.

After removing the periwinkles, add the chopped chives (about 5cm long) and the minced garlic (1 Tbsp) to the boiling broth. Continue to boil for another 2 minutes to allow the flavors to meld together.

Finally, season the soup with 1/2 tablespoon of salt (or Korean soup soy sauce) and 2 tablespoons of oyster sauce. Stir well and boil for another 2 minutes. Your refreshing and deeply flavorful clear periwinkle soup is now complete. Adjust the saltiness to your preference.
