Clear Periwinkle Soup (Oelgaeng-i Guk) – Gyeongsang Style
Refreshingly Clear and Deep Flavored Periwinkle Soup (Godi-guk)
We’re making a traditional Gyeongsang-style clear periwinkle soup using freshly caught periwinkles, homegrown chives, and garden-fresh garlic. This soup is known for its clean, savory broth that’s incredibly comforting and satisfying.
Main Ingredients- Periwinkles (Oelgaeng-i/Godi) – about 1 handful
- Chives – 1 handful
- Water – 6 cups (approx. 1.2L)
Seasoning- Minced garlic – 1 Tbsp
- Salt (or Korean soup soy sauce) – 1/2 Tbsp (adjust to taste)
- Oyster sauce – 2 Tbsp

Cooking Instructions
Step 1
First, prepare the periwinkles. Rinse them thoroughly under running water several times to remove any shells or impurities. Scrubbing them gently will ensure they are extra clean.
Step 2
Pour 6 cups (about 1.2L) of clean water into a deep pot. Bring the water to a boil over high heat. Wait until the water is vigorously boiling.
Step 3
Prepare the minced garlic, which is 1 tablespoon. Using fresh garlic will enhance the depth of flavor in the soup.
Step 4
Cut the chives into approximately 5cm lengths. You’ll need about one handful. The chives are added towards the end to preserve their fresh aroma and crisp texture.
Step 5
Once the water is boiling rapidly, add the prepared periwinkles and boil for about 2 minutes. Cooking them for too long can make the periwinkles tough, so timing is key.
Step 6
After removing the periwinkles, add the chopped chives (about 5cm long) and the minced garlic (1 Tbsp) to the boiling broth. Continue to boil for another 2 minutes to allow the flavors to meld together.
Step 7
Finally, season the soup with 1/2 tablespoon of salt (or Korean soup soy sauce) and 2 tablespoons of oyster sauce. Stir well and boil for another 2 minutes. Your refreshing and deeply flavorful clear periwinkle soup is now complete. Adjust the saltiness to your preference.
