Here’s a simple and delicious recipe for a clear, refreshing beef and radish soup. It’s easy to make and perfect for a comforting home-cooked meal.
Main Ingredients- Beef (for soup) 250g
- Daikon Radish 500g
- Tofu 1 block
- Green Onion 1 stalk

Step 1
Before you begin, please measure and prepare all the ingredients listed for this recipe. Having everything ready will make the cooking process much smoother and more enjoyable!
Step 2
First, let’s make a flavorful broth. Pour 1.3L of water into a pot and add the kelp or anchovy broth pack. Simmer over medium heat for 10-15 minutes to extract a rich broth. Remove the broth pack and set the broth aside.
Step 3
Wash the daikon radish, peel it, and then cut it into bite-sized pieces, about 2-3 cm thick. Try to make the pieces relatively uniform in size. Cutting them too thin might cause them to break apart during cooking.
Step 4
Prepare the green onion by separating the white and green parts. Slice the white part diagonally into about 1cm thick pieces. Finely chop the green part to use as a garnish later.
Step 5
Cut the tofu into bite-sized cubes, approximately 1.5-2 cm. We’ll add this towards the end to prevent it from crumbling.
Step 6
Now, it’s time to stir-fry. Heat 1 Tbsp of perilla oil in a pot over medium heat. Add the beef and stir-fry just until the outer surface loses its pink color. Be careful not to overcook, as this can make the beef tough.
Step 7
Once the beef is lightly browned, add the sliced daikon radish and the white parts of the green onion. Stir-fry together for about 1 minute. This step helps to bring out the natural sweetness of the radish and enhance the overall flavor of the ingredients.
Step 8
Carefully pour the prepared warm broth (1.3L) into the pot. Ensure the broth generously covers the ingredients.
Step 9
Add 1 Tbsp of minced garlic to build the base flavor of the soup.

Stir in 1.5 Tbsp of soy sauce for soup to add savoriness and seasoning. If the soup isn’t salty enough for your taste, you can adjust the seasoning with a pinch of salt later.

Add 2.5 Tbsp of fish sauce. This secret ingredient will make the soup exceptionally deep and refreshing, without any fishy taste.

Finally, add the cubed tofu. Cover the pot and let it simmer over medium-low heat for about 15-20 minutes, or until the daikon radish is tender. Skim off any foam that rises to the surface during cooking for a clearer broth.
Step 13
Ladle the perfectly cooked beef and radish soup into serving bowls. Garnish with the chopped green onion tops. Your delicious and clear beef and radish soup is now ready to be enjoyed with a warm bowl of rice!
