Main Ingredients

Prepare the Beef: Gently pat the beef dry with paper towels to remove excess blood. Slice it into bite-sized pieces, about 1cm thick. To further remove blood and tenderize the meat, soak it in lukewarm water for 30-40 minutes, changing the water once or twice if blood appears. Thoroughly draining the blood will result in a cleaner-tasting broth.

Prepare Radish and Green Onion: Slice the radish into approximately 8mm thick pieces. Half-moon or rectangular shapes work well. Avoid cutting them too thick, as they will take longer to cook. Finely chop the green onion. (Optional: thinly slice 1/4 onion to add extra sweetness and depth of flavor).

Sear and Simmer: In a pot, add the drained beef and sear it over high heat just until the surface changes color. (A little oil can be added here if desired). Once the beef is lightly browned, add the sliced radish and green onion (and optional onion). Stir and lightly sauté them together for a minute. Pour in enough cold water (about 1.5-2 liters) to cover the ingredients, and bring to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and simmer for 15-20 minutes, or until the radish becomes tender and translucent. Skim off any scum that rises to the surface during cooking for a clearer broth. About halfway through the simmering, add 1 teaspoon of minced garlic and 2 teaspoons of soy sauce for soup.

Final Seasoning and Serving: Once the radish is cooked through and the flavors have melded, taste the broth and adjust the seasoning with salt as needed. Finish with a sprinkle of black pepper.
