Clear and Spicy! Scallop and Shrimp Fish Cake Soup with Kalguksu and Mandu
A refreshing fish cake soup brimming with fresh scallops and plump shrimp, plus hearty kalguksu and mandu!
As the weather gets cooler, a warm, comforting broth is just what you need. I’ve prepared a special dish that can be enjoyed at home, perfect as both a snack and a meal. We’ve added plenty of fresh scallops and sweet shrimp, seasonal favorites in autumn, to deepen and refresh the soup’s flavor. To complete this bountiful meal, we’re also including chewy kalguksu noodles and dumplings – a truly two-birds-one-stone recipe! It’s perfect as a light drinking snack or a satisfying meal.
Broth Ingredients- 1 Dried Pollack Head (rinsed clean)
- Small piece of Daikon Radish (peeled and cut into large chunks)
- 1.5 Liters Water
Main Ingredients- 1 pack Skewered Fish Cakes (cut as desired or left whole)
- 10 Shrimp (peeled and deveined)
- 1kg Scallops (scrubbed clean with a brush)

Cooking Instructions
Step 1
Let’s start by preparing the fresh scallops. Hold each scallop and use a brush to thoroughly scrub the spaces between the shells, ensuring they are clean and free of debris. If they haven’t been purged of sand, soaking them in cold water can help with this.
Step 2
In a deep pot, add 1.5 liters of water. Include the rinsed dried pollack head and the large chunks of daikon radish. Bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10-15 minutes to extract a delicious broth.
Step 3
Once the broth has developed a good flavor, remove the dried pollack head and radish. Add 1 tablespoon of minced garlic and the store-bought fish cake soup base (or adjust seasoning with soy sauce and salt) to the broth for extra umami. Then, add the prepared skewered fish cakes, the cleaned scallops, and the plump shrimp. Let everything simmer together. The seafood will release its flavors, making the soup even more refreshing.
Step 4
Finally, add the diagonally sliced Cheongyang peppers for a spicy kick, and the diagonally sliced green onion for a fragrant aroma. Let it simmer for a few more minutes. Your delicious scallop and shrimp fish cake soup is now ready! For a heartier meal, feel free to add kalguksu noodles or dumplings to make it a Kalguksu and Mandu fish cake soup.
