How to Make a Refreshing and Spicy Mussel Soup
Here’s a simple and satisfying recipe for a refreshing and spicy mussel soup. It’s brimming with the fresh taste of the sea, perfectly balanced with the heat of chili peppers, the aroma of garlic, and the freshness of green onions. The clear, invigorating broth is excellent for a hangover cure or as a delightful pairing with drinks. You can easily make this at home!
Ingredients- 600g fresh mussels
- 5 cloves garlic
- 1 chili pepper (e.g., Cheongyang chili)
- 1/4 stalk green onion
- 4 cups water
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, thoroughly clean the mussels under cold running water. Scrub off any dirt and pull out the ‘beards’ (byssus threads). Removing debris is crucial for a clear broth. Place the cleaned mussels in a pot.
Step 2
Add 4 cups of water to the pot, enough to cover the mussels. Slice the garlic cloves thinly and add them to the pot. Garlic helps to eliminate any fishy odor from the mussels and adds a refreshing depth to the broth. Bring the mixture to a boil over high heat.
Step 3
Once the water starts boiling vigorously, the mussels will naturally begin to open. At this point, finely chop the chili pepper and add it to the pot. Also, thinly slice the green onion diagonally and add it. The spicy kick from the chili and the fresh aroma of the green onion will elevate the soup’s flavor.
Step 4
Finally, season the soup with a pinch of salt to your taste. It’s best to add salt gradually and taste as you go, as over-salting can mask the mussels’ natural flavor. A final sprinkle of black pepper will enhance the aroma. Enjoy your delicious mussel soup!
