Today, I’ll introduce a clear and refreshing squid radish soup recipe using squid, a high-protein, low-calorie ingredient with no waste. While many enjoy squid raw, it’s recommended to cook it due to potential parasite risks. With this recipe, you can fully enjoy squid’s nutrients without feeling weighed down. Essential Ingredients- 1 whole squid (cleaned)
- 1 piece of radish (approx. 200-300g)
- A small bunch of scallions (using both white and green parts)
- 1L of clear broth (anchovy-kelp broth or dried pollock broth recommended)
- 1 Tbsp sesame oil
- 3 Tbsp soy sauce for soup (or regular soy sauce)
- 1 Tbsp fish sauce (or anchovy sauce)
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
Rinse the squid thoroughly under running water without removing the skin. Leaving the skin on makes the broth more refreshing and adds umami. Make diagonal scores on the inside of the squid’s body. This helps it cook evenly and absorb flavors better.
Step 2
Peel and wash the radish, then slice it thinly across (nabak-style), about 0.5cm thick. Avoid slicing too thinly, as it might break apart while cooking. Chop the scallions finely. If you have green onions, you can use them instead of scallions.
Step 3
Heat 1 Tbsp of sesame oil in a pot over medium-low heat. Add the sliced radish and sauté for about 5 minutes until it becomes slightly translucent and releases its sweetness. Pour in 1L of the prepared clear broth. If you don’t have anchovy-kelp broth, make one by boiling water with anchovies and kelp for 10 minutes before proceeding.
Step 4
Once the broth comes to a boil, add the prepared squid and cook for another 2-3 minutes. Be careful not to overcook the squid, as it can become tough. When the squid is almost cooked, season with 3 Tbsp soy sauce for soup, 1 Tbsp fish sauce, and 1 Tbsp minced garlic. You can use any type of fish sauce. Taste and adjust the seasoning to your preference.
Step 5
Finally, add the chopped scallions and simmer for another minute to finish. Your delicious, clear squid radish soup is ready! Enjoy this warm and refreshing soup with a bowl of rice!
