How to Make Clear Potato Soup
I made a clear potato soup with fresh, seasonal potatoes. The clear broth and fluffy potatoes are incredibly delicious. It’s a light soup, perfect for breakfast menus. Enjoy this comforting and flavorful soup!
Main Ingredients- 2 medium potatoes
- 1/2 onion
- 1/2 green onion
Seasoning- 1/2 Tbsp minced garlic
- 1/2 Tbsp salted shrimp (liquid only)
- 1 Tbsp soy sauce for soup
Broth Ingredients- 2 anchovy and kelp packs
- 1 liter of water (approx. 4 cups)

Cooking Instructions
Step 1
First, place the 2 anchovy and kelp packs and 1 liter of water (about 4 cups) into a pot. Bring to a boil over high heat. Once boiling, reduce to medium heat and simmer for 10 minutes to extract a rich broth.
Step 2
While the broth is simmering, thinly slice the green onion diagonally and chop the onion into slivers. Preparing the ingredients beforehand makes the cooking process much smoother.
Step 3
Peel the fresh potatoes and cut them into bite-sized cubes, about 1.5 cm thick. Cutting them too thinly might cause them to break apart while cooking, so aim for a moderate thickness.
Step 4
Rinse the cut potatoes under cold water for about 5 minutes to remove excess starch. This step helps to make the soup clearer and reduces any chalky taste from the potatoes.
Step 5
After 10 minutes, remove the anchovy and kelp packs from the broth. Add the rinsed potatoes to the pot. Cook over medium heat until the potatoes are tender.
Step 6
Once the potatoes begin to cook, add 1/2 tablespoon of minced garlic to enhance the flavor.
Step 7
Add 1 tablespoon of soy sauce for soup to provide a basic seasoning for the broth. This soy sauce helps to maintain the clean taste of the potato soup.

Add 1/2 tablespoon of salted shrimp, using only the liquid. The unique savory flavor of salted shrimp will make the broth more refreshing and deeper. Taste and adjust seasoning as needed.
Step 9
Cook until a fork inserted into the potatoes goes through easily and the cut edges of the potatoes appear slightly translucent. This should take about 5-7 minutes.
Step 10
When the potatoes are almost cooked and turning translucent, add the pre-sliced onion and green onion. Simmer for a bit longer until all ingredients are tender. Turn off the heat, and optionally, sprinkle a pinch of black pepper to finish.

And there you have it – a clear and refreshing potato soup! It’s absolutely delicious served with a bowl of freshly cooked rice.
