Main Ingredients for Clear Fresh Cod Soup

  • 1 Fresh Cod (cleaned and prepared)
  • 10g Dried Kelp (about 10×10 cm)
  • 200g Korean Radish (sliced thinly)
  • 100g Bean Sprouts (rinsed thoroughly)
  • 1/2 block Firm Tofu (cut into cubes)
  • 1/2 stalk Green Onion (chopped)
  • 1 Green Chili Pepper (sliced diagonally)
  • 1/2 Red Chili Pepper (sliced diagonally)
  • 1 handful Crown Daisy (Chamnamul or similar greens)
  • 1 handful Water Dropwort (Mi-na-ri)

Cooking Instructions

First, to create a clear broth, add 1.5 liters of water to a pot along with the thinly sliced Korean radish and dried kelp. Bring to a boil over high heat. Once boiling, remove the kelp after about 5 minutes. Continue to simmer over medium heat for another 10 minutes, or until the radish becomes translucent, allowing its refreshing flavor to fully infuse the broth. This step is crucial for achieving the best taste!

Once the broth is ready, carefully add the prepared fresh cod to the pot. Cod can break apart if overcooked, so it’s best to cook it just until it starts to float to the surface after the broth returns to a simmer.

As the cod begins to float, add the rinsed bean sprouts and cubed tofu. To keep the bean sprouts crisp, avoid overcooking them. The tofu will add a wonderful softness to the soup.

Taste the soup and adjust the seasoning with coarse sea salt as needed. A pinch of black pepper can also be added at this stage for extra flavor.
