Clear and Refreshing Fish Cake Soup
Kid-Friendly! Refreshing Clear Radish Fish Cake Soup Recipe
A clear and refreshing fish cake soup made with large winter radish and tender fish cakes. This is a perfect soup dish for children’s side dishes or as a hangover cure.
Main Ingredients- 1/2 Winter Radish (approx. 500g, peeled and thoroughly washed)
- 4 Slices of Flat Fish Cake (or regular fish cake)
- A small bunch of Green Onions (white parts mainly)
Broth Ingredients (Optional)- 1 tsp Chili Seeds (if you want a slightly spicy flavor)
- 1 piece Dried Kelp for broth (optional)
- 1 tsp Chili Seeds (if you want a slightly spicy flavor)
- 1 piece Dried Kelp for broth (optional)
Cooking Instructions
Step 1
Peel and thoroughly wash the winter radish. Slice it thinly and flatly, about 0.5cm thick. Avoid slicing too thinly, as it might break apart during cooking; a moderate thickness is ideal for a good texture.
Step 2
Cut the flat fish cakes into pieces similar in size to the sliced radish. Cutting them into manageable sizes will make them easier for children to eat.
Step 3
Finely chop the green onions, focusing on the white parts. These will be used as a garnish or to add aroma to the soup.
Step 4
Pour boiling water over the sliced fish cakes and let them soak for 2-3 minutes. This step removes excess oil, preventing the soup from becoming greasy, and also eliminates any unwanted additives or fishy smells, resulting in a cleaner taste.
Step 5
Place the sliced radish in a pot and add enough water to cover it. Bring to a boil and simmer for about 10 minutes with the lid on. If you desire a hint of spiciness, place the chili seeds in a cheesecloth bag or a tea infuser and boil them with the radish. Omit the chili seeds if you prefer no spice at all.
Step 6
Once the radish is somewhat tender, add the blanched fish cakes (from step 3) to the pot.
Step 7
Add 2 tablespoons of tuna extract and 1 tablespoon of mirin to season the soup. If you don’t have tuna extract, soup soy sauce can be used as a substitute. Taste the soup and adjust the seasoning with salt if needed. Let it simmer for about 10 more minutes to allow the flavors to meld well.
Step 8
Finally, add the chopped green onions and bring the soup to a gentle boil for a short while until the ingredients are well combined. Avoid boiling for too long after adding the green onions, as their texture might become too soft.
Step 9
You can create such a clean and refreshing fish cake soup with just winter radish and fish cakes! Its mild and clear broth is not only great as a side dish for kids but also excellent as a soothing hangover remedy. Enjoy it warm!
