A comforting bowl to soothe your stomach after a night of indulgence. This simple and quick soup is perfect when you crave a warm, clear broth. It’s an ideal meal to revitalize and ease you into the day.
Main Ingredients- 1 handful Dried Pollack (about 30g)
- 150g Radish
- 1/2 stalk Scallion
- 2 Cheongyang Peppers (optional)
Seasoning & Broth- 1 tsp Minced Garlic
- 800ml Water (approx. 4 cups)
- 1 tsp Salt (or soup soy sauce, adjust to taste)
- 1 tsp Minced Garlic
- 800ml Water (approx. 4 cups)
- 1 tsp Salt (or soup soy sauce, adjust to taste)
Cooking Instructions
Step 1
Cut the dried pollack into bite-sized pieces, about 2-3cm long. (If using shredded inner fillet, it might be longer, so trim as needed.) Slice the radish thinly, about 0.3cm thick, or julienne it. Slice the scallion diagonally, about 0.5cm thick. Finely chop the Cheongyang peppers after removing the seeds. (Use Cheongyang peppers if you prefer a spicier kick; they can be omitted based on your preference.)
Step 2
In a pot without any oil, add the dried pollack and sauté over medium-low heat for about 1-2 minutes until a nutty aroma is released. This step removes any fishy odor and enhances the savory flavor. (The sautéed pollack makes a delicious snack on its own!)
Step 3
Add the sautéed dried pollack to the pot. Then, add the prepared radish and 800ml of water. Bring to a boil over high heat.
Step 4
Once the water starts boiling, reduce the heat to medium and add the minced garlic and diagonally sliced scallions. Let it simmer to extract the clear flavors.
Step 5
Season the soup with 1 tsp of salt. Adding a little soup soy sauce can enhance the umami depth. (Adjust the salt or soup soy sauce to your liking for desired saltiness.) If you want a spicy kick, add the chopped Cheongyang peppers at this stage. A pinch of red pepper flakes can also be added according to preference.
Step 6
Continue to boil for about 5-7 minutes until the radish becomes transparent and tender. Once the broth is clear and refreshing, turn off the heat. Ladle the finished Dried Pollack and Radish Soup into a warm bowl. It’s a perfect hangover cure and a satisfying meal!
