Hello everyone! Today, I’m sharing a recipe for a clear and refreshing soup that’s perfect for relieving hangovers after holiday gatherings. My measurements are based on a tablespoon (T) using a Korean soup spoon.

Ingredients

  • 1 handful dried pollack (about 30g)
  • 2 handfuls bean sprouts (about 100g)
  • 2 eggs
  • 5 Tbsp minced green onion (based on Korean soup spoon)
  • 2/3 Tbsp minced garlic (based on Korean soup spoon)
  • 1 Tbsp sesame oil (based on Korean soup spoon)
  • 3 Tbsp soup soy sauce (based on Korean soup spoon)
  • A pinch of black pepper
  • 500ml anchovy-kelp broth
  • 500ml water

Cooking Instructions

1. First, prepare 500ml of anchovy-kelp broth, which forms the base for our clear and refreshing soup. We will combine this broth with 500ml of water later. 2. Lightly rinse the dried pollack under running water to remove any impurities. Avoid washing for too long, as this can diminish the flavor. A quick rinse is best.

3. Cut the rinsed dried pollack into bite-sized pieces (about 2-3 cm) with scissors and place them in a pot. Let them sit for a bit to soften while you prepare the other ingredients.

4. Trim any yellowed roots or blemishes from the bean sprouts. Wash them thoroughly 2-3 times under running water, then drain them in a colander.

5. Lightly beat the 2 eggs in a bowl. Also, have your 5 Tbsp of minced green onions ready for easy addition.

6. Add 1 Tbsp of sesame oil to the pot with the dried pollack. Sauté over medium heat for about 10 seconds until fragrant. Pour in the prepared 500ml of anchovy-kelp broth and 500ml of water. Bring to a boil over high heat, then reduce to medium-low and simmer for 5 minutes. Add the prepared bean sprouts and simmer for another 5 minutes with the **lid off**. Keeping the lid off helps the bean sprouts stay crisp! Finally, stir in 2/3 Tbsp minced garlic, 3 Tbsp soup soy sauce, and a pinch of black pepper. Pour in the beaten eggs and add the minced green onions. Simmer for just 1 more minute to complete this delicious dried pollack and bean sprout soup!
