A deeply savory and incredibly refreshing beef and radish soup, seasoned perfectly with salted shrimp.
My eldest son was craving some hearty soup, so I decided to make some delicious beef and radish soup using beef brisket! I always use brisket for my soups because I love its satisfyingly chewy texture. This soup is naturally refreshing due to the radish, but to elevate that coolness even further, I seasoned it with salted shrimp. The resulting broth is so incredibly clear and delicious, it truly makes you sigh with satisfaction! With a bowl of rice, this soup is perfect even with just kimchi or a small side of pickled seafood. Main Ingredients- Beef Brisket 3 cups
- Korean Radish (Mu) 1/2 medium
- Rice Water (Silt-Peel Water) 1.5 L
Seasoning & Aromatics- MSG seasoning (optional, to taste) 1 Tbsp
- Minced Garlic 1 tsp
- Salted Shrimp (adjust to taste) 3 tsp
- Green Onion, chopped, adequate amount

Cooking Instructions
Step 1
First, soak the beef brisket in cold water for about 30 minutes to remove any excess blood. Properly draining the blood is key to ensuring a clear and clean-tasting broth.
Step 2
In a deep pot, combine the drained beef brisket and 1.5 liters of rice water. Bring to a boil over high heat. Using rice water will make the broth smoother and richer.
Step 3
Wash the radish, peel it, and then cut it into thick slices about 0.5cm thick, or julienne it into thick strips. Cutting the radish thickly gives it a nice texture when eaten.
Step 4
Once the beef in the boiling pot is about halfway cooked, add the prepared radish and continue to simmer together. Cook for another 10-15 minutes, or until the radish is tender.
Step 5
When the radish is cooked, add the seasoning ingredients to taste. Stir in 1 tsp of minced garlic and 3 tsp of salted shrimp. Taste the broth and adjust the seasoning with more salted shrimp or salt if needed. Finally, add the chopped green onions and simmer for another moment. Your delicious beef and radish soup is ready! (Adding about 1 Tbsp of MSG seasoning is optional for extra umami.)
