Main Ingredients

  • 1 whole chicken (approx. 1kg / 2.2 lbs)
  • 2 stalks green onions (scallions)
  • 1 onion

Cooking Instructions

Step 1

First, prepare the chicken by cleaning it thoroughly. If there’s a lot of fat around the cavity or tail end, removing it will result in a cleaner broth. Place the cleaned chicken, washed green onions (mostly the white parts), and peeled onion into a pressure cooker. Add enough cold water to completely cover the chicken. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 20-30 minutes until the chicken is well-cooked. Using a pressure cooker will tenderize the chicken and extract a rich broth.

Step 1

Step 2

Once the steam has released from the pressure cooker, carefully open the lid and check if the chicken is cooked through. It’s perfectly cooked when the meat is tender and easily falls off the bone. The broth extracted at this stage is naturally flavorful and forms the foundation of a delicious Dakgomtang.

Step 2

Step 3

Remove the cooked chicken from the pot and let it cool slightly. Then, carefully debone the chicken and shred the meat into bite-sized pieces, following the grain of the meat. If you want to add more depth to the broth, you can return the bones or skin to the pot and simmer further. However, for a clear and light soup, it’s best to remove them.

Step 3

Step 4

Strain the chicken broth through a fine-mesh sieve to remove any impurities. Skim off any excess fat that floats on the surface with a spoon. This step is crucial for achieving a clear and light flavor. Once the fat is removed, return the clear broth to a pot and bring it to a gentle simmer.

Step 4

Step 5

Ladle the clear chicken broth into a serving bowl. Add the shredded chicken meat. You can either pour the simmering broth over the meat in the bowl, or arrange the shredded chicken on top of rice before pouring the broth. For extra flavor and presentation, garnish with finely chopped green onions or scallions. Finally, season with salt and pepper to your preference. Your delicious Dakgomtang with a clear and deep broth is now ready!

Step 5

Step 6

What better accompaniment to this rich and flavorful Dakgomtang than kimchi! Serving it with refreshing Napa cabbage kimchi or crunchy radish kimchi creates a perfect meal. I recently made scallion kimchi and added it as a side, and the pungent aroma of the scallions paired wonderfully with the mildness of the chicken soup. It’s hearty enough that you won’t need many other side dishes.
