First, trim the tough stems from the shiitake mushrooms and rinse them clean. Slice them into bite-sized pieces, about 0.5 cm thick. Heat a lightly oiled pan over medium heat. Add the sliced shiitake mushrooms. Adding a pinch of salt at this stage will enhance their flavor. Sauté the mushrooms until they soften and turn golden brown. Transfer the sautéed mushrooms to a separate plate.

Next, prepare the carrot. Julienne the carrot into thin strips. You can use the same pan you used for the mushrooms, or a clean one with a little oil. Add the julienned carrots and stir-fry them until they are slightly tender, about 2-3 minutes. Set the cooked carrots aside on a plate.

Wash the cucumber and trim off the ends. Julienne it into thin strips. Cucumbers can be added raw, but you can also lightly sauté them if you prefer. If sautéing, add the julienned cucumber to the pan and cook for about 1 minute to retain its crispness. Keep all prepared vegetables separate.
