There’s a fantastic restaurant known for its amazing Kalguksu, and I was curious about how they achieve such a rich broth. I discovered a secret: adding a cup of soba dipping sauce! Topped generously with various garnishes, this dish makes for a satisfying and hearty meal. This recipe brings that delightful flavor right into your home kitchen.
Kalguksu Noodles & Broth Ingredients- 600g fresh Kalguksu noodles
- 50g dried pollock (dried cod)
- 1 green chili pepper
Broth Seasoning- 180ml Soba dipping sauce (store-bought)

Cooking Instructions
Step 1
First, let’s prepare the flavorful broth. In a pot, combine 1000ml of clear water, a handful of dried pollock, and 1 green chili pepper. Simmer for 5 minutes to extract the savory essence of the pollock. (You’ll strain this broth later, so don’t worry about the solids yet). Boil the fresh Kalguksu noodles (600g) in a separate pot of clear water for 5 minutes. Once cooked, drain and rinse them under cold water to enhance their chewy texture. In another pot, bring 1000ml of clear water to a boil and add the 180ml of soba dipping sauce to create the base broth. Add the boiled noodles and the dried pollock to this broth and continue to simmer for another 7 minutes to complete the Kalguksu.
Step 2
Next, let’s make a delicious seasoning sauce to enhance the flavor. In a small bowl, mix 1 Tbsp of chopped green onion, 1 tsp of minced garlic, 1 tsp of sesame seeds, and 1 tsp of sesame oil. Stir everything together until well combined. Feel free to add a pinch of red pepper flakes or a dash of soy sauce according to your preference.
Step 3
Prepare an egg garnish for a beautiful finish. Whisk the eggs lightly and cook them into thin omelets. Let them cool completely, then thinly slice them into strips.

For a refreshing crunch and subtle sweetness, let’s prepare the zucchini garnish. Julienne the zucchini and stir-fry it in a pan with a little oil and some dried shrimp powder. Cook just until tender-crisp, avoiding overcooking.

To add a zesty kick, we’ll prepare the kimchi garnish without cooking. Finely chop fresh, well-fermented kimchi and serve it as is. This provides a fresh, tangy contrast to the warm noodles.
