Simmer for 5 minutes to extract the savory essence of the pollock. (You’ll strain this broth later, so don’t worry about the solids yet). Boil the fresh Kalguksu noodles (600g) in a separate pot of clear water for 5 minutes. Once cooked, drain and rinse them under cold water to enhance their chewy texture. In another pot, bring 1000ml of clear water to a boil and add the 180ml of soba dipping sauce to create the base broth. Add the boiled noodles and the dried pollock to this broth and continue to simmer for another 7 minutes to complete the Kalguksu.

Next, let’s make a delicious seasoning sauce to enhance the flavor. In a small bowl, mix 1 Tbsp of chopped green onion, 1 tsp of minced garlic, 1 tsp of sesame seeds, and 1 tsp of sesame oil. Stir everything together until well combined. Feel free to add a pinch of red pepper flakes or a dash of soy sauce according to your preference.
