Ingredients- Fresh clams
- Coarse salt (sea salt recommended)
Cooking Instructions
Step 1
First, it’s essential to thoroughly clean off any mud or debris attached to the clam shells. Place the clams in a bowl of running water and use a clean vegetable brush or an old toothbrush to scrub the shells, paying attention to the crevices. This step ensures that any grit or residue clinging to the shells is effectively removed, preparing them for a cleaner purging process.
Step 2
Now, let’s create a saltwater solution that mimics the ocean, which will help the clams expel any grit. For every 1 liter (approximately 4 cups) of clean water, dissolve about 35g of coarse salt. If you’re using about 180ml of water (roughly 3/4 cup), use approximately 2 tablespoons of coarse salt. Adjust the salt quantity based on the amount of water you are using.
Step 3
Here’s a special tip to enhance the purging process: add a piece of metal! Use an old rusty nail, a stainless steel spoon, or a fork – any metal object you have on hand – and place it into the saltwater with the clams. The trace amounts of iron released from the metal help stimulate the clams to release their grit more effectively. Once the clams, saltwater, and metal object are in a deep bowl, cover it tightly with plastic wrap or a lid to block out all light, creating a dark environment similar to the seabed. Let them sit undisturbed in this dark, quiet place for 4 to 6 hours, or even overnight. This extended period allows the clams to purge thoroughly.
Step 4
After purging, rinse the clams one more time under clean running water to wash away any remaining sand or loosened grit. These perfectly prepared clams are now ready to be used in your favorite dishes, adding a deep, briny flavor to everything from noodle soups and stews to pasta. Enjoy your delicious creations!
