Main Ingredients

  • 2/3 bunch scallions, trimmed and washed
  • 2 cups all-purpose flour
  • 1 cup Korean pancake mix (buchim garu)
  • 3 and 1/2 cups water (approx. 700ml)
  • 2 large eggs
  • Pinch of salt
  • 1-2 Cheongyang chili peppers, finely chopped (optional)

Cooking Instructions

Thoroughly wash and trim the scallions, then prepare them. (If your scallions aren’t trimmed yet, this is a good time to get them ready!)

In a large bowl, combine 2 cups of all-purpose flour with 1 cup of Korean pancake mix. Using pancake mix will result in an even crispier and more delicious pancake. Add 3 and 1/2 cups of water (approximately 700ml) to the mixture.

Whisk the batter well using a whisk or chopsticks, ensuring there are no lumps. Aim for a smooth consistency, not too thick or too thin.

Crack 2 large eggs into the batter and add a pinch of salt for seasoning. Whisk again thoroughly to incorporate the eggs into the batter.

Chop the prepared scallions into bite-sized pieces, about 3-4 cm long. There’s no rule that says scallion pancakes must be made with long scallions! Chopping them makes them easier to eat and much more convenient to mix into the batter.

Add a generous amount of the chopped scallions to the batter. The more scallions you add, the richer and tastier your pancake will be. Gently mix the scallions into the batter.

If you’d like a spicy kick, finely chop 1-2 Cheongyang chili peppers and mix them into the batter. You can omit them if you’re cooking for children.
