Choi Hwa-jung’s Melon Salad Recipe to Boost Your Appetite
Following a recipe from a Man-gae Live video, I’ve recreated Choi Hwa-jung’s very popular melon salad. It’s refreshing and sweet, perfectly stimulating your appetite. This salad is a delightful dish, especially during warmer weather, offering a simple yet wonderfully delicious taste.
Ingredients
- 1 melon (or 2 small ones)
- 3 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- Juice of 1/2 lemon
- Pinch of salt
Cooking Instructions
Step 1
First, wash the melon thoroughly. Then, peel it partially, leaving about half of the striped skin intact; you can do this by ‘scraping’ the peel off rather than removing it completely. (If using small melons, 2 pieces are fine.)
Step 2
Cut the melon in half lengthwise. Next, use a spoon to scoop out the seeds. Place the scooped-out parts over a fine-mesh sieve and press gently to extract the clear melon juice. This juice will form the base of your dressing.
Step 3
Slice the peeled and seeded melon thinly. Slicing it thinly is key to achieving the best texture, so avoid cutting it too thick.
Step 4
In a bowl, combine the extracted melon juice with 3 tablespoons of olive oil, 1 tablespoon of apple cider vinegar, the juice from half a lemon, and a pinch of salt. Whisk gently with a whisk or chopsticks until all ingredients are well combined to create a delicious dressing.
Step 5
Arrange the thinly sliced melon attractively on a flat serving plate. Drizzle the freshly made, refreshing dressing evenly over the melon slices.
Step 6
Finally, for an aromatic finish, finely grate the zest from the lemon and sprinkle it over the melon salad. Enjoy your fragrant and delicious melon salad!
