- 2 servings somyeon (thin wheat noodles)
- 200g well-fermented yeolmu kimchi (young radish kimchi)

Yeolmu Kimchi cold noodles are wonderfully refreshing in the summer heat, but they’re also a unique treat enjoyed in a warm room during winter. It’s a delightful dish that can be enjoyed year-round.

For the broth, we’ll use a convenient store-bought cold noodle soup base. This will provide a delicious foundation for our dish.

Prepare your well-fermented yeolmu kimchi. We’ll be separating the kimchi solids from the juice. First, set aside the kimchi solids for a moment.

Strain the yeolmu kimchi juice through a fine-mesh sieve. This process removes any coarse seasonings like chili powder or garlic, resulting in a clearer and cleaner broth. This also contributes to the beautiful color of the noodles.

Gently squeeze the reserved yeolmu kimchi solids to remove excess liquid. This helps to control the saltiness while retaining a pleasant crunch. Slice the cucumber thinly for garnish.

Cook the somyeon noodles in plenty of boiling water. Once the water comes to a boil, add the noodles. When it boils up again, pour in some cold water. Repeat this process once or twice until the noodles are perfectly cooked. Drain immediately once tender.

Drain the cooked somyeon noodles thoroughly in a colander. Once the water has completely dripped off, place the noodles in a bowl. Arrange the prepared yeolmu kimchi solids and sliced cucumber attractively on top.
