Ingredients for Naengchae Jokbal- Pig’s trotters (pre-cooked or homemade) 10 pieces
- Cucumber a little
- Bell pepper (any color) a little
- Onion a little
- Carrot a little
- Red lettuce or perilla leaves a few leaves
- Sesame seeds a sprinkle
Mustard Dressing- Vinegar 2 Tbsp
- Sugar 1 Tbsp
- Soy sauce 1/2 Tbsp
- Mustard paste 1/2 Tbsp (adjust to taste)
- Sesame oil 1/2 Tbsp
- Minced garlic 1 tsp
- Sesame seeds 1 tsp
- Vinegar 2 Tbsp
- Sugar 1 Tbsp
- Soy sauce 1/2 Tbsp
- Mustard paste 1/2 Tbsp (adjust to taste)
- Sesame oil 1/2 Tbsp
- Minced garlic 1 tsp
- Sesame seeds 1 tsp
Cooking Instructions
Step 1
Prepare all your ingredients for a delicious Naengchae Jokbal. Slice the pig’s trotters into bite-sized pieces. Julienne the cucumber, bell pepper, onion, and carrot thinly. Wash the lettuce leaves and pat them dry.
Step 2
Arrange the julienned vegetables attractively in a large serving bowl. Place the sliced pig’s trotters on top of the vegetables. Finally, sprinkle some sesame seeds over everything for a nutty aroma and flavor.
Step 3
Make the refreshing mustard dressing to serve alongside. In a small bowl, combine vinegar, sugar, soy sauce, sesame oil, minced garlic, and sesame seeds. Mix well. Tip: When adding the mustard paste, start with 1/2 Tbsp and gradually add more to achieve your desired level of spiciness and flavor. Don’t add it all at once! Serve the Naengchae Jokbal with the prepared mustard dressing and enjoy this delightful dish.
