As the weather gradually warms up, our appetites can sometimes dwindle. This acorn jelly soup, prepared with a savory kimchi broth, is a fantastic light meal that’s also wonderfully diet-friendly. It’s a refreshing and satisfying dish that’s perfect for any meal, especially when you need a cool respite from the heat.
Main Ingredients- Acorn Jelly (Dotori Muk) 300g (homemade or store-bought)
- Well-fermented Kimchi 2 cups
- Green Chili Peppers 2
- Chilled Radish Water Kimchi Broth (Dongchimi Yuksu) 2 packets (slightly frozen for extra chill)
Seasoning and Garnish- Sugar 1 Tbsp
- Sesame Oil 0.5 Tbsp
- Toasted Sesame Seeds 0.5 Tbsp
- Shredded Seaweed (Gim) for garnish (optional)

Cooking Instructions
Step 1
Begin by preparing your acorn jelly. If you’ve made your own, that’s wonderful! Otherwise, store-bought acorn jelly works perfectly well. Ensure the jelly is fresh for the best texture.
Step 2
Cut the acorn jelly into bite-sized pieces, approximately 1cm wide and 5cm long. If the jelly has been refrigerated and feels firm, immerse it in boiling water for at least 10 minutes to soften. This step is crucial for achieving a pleasant, chewy texture.
Step 3
Finely chop the kimchi. In a bowl, combine the chopped kimchi with 1 Tbsp of sugar and 0.5 Tbsp of sesame oil. Gently mix and massage the ingredients together until the kimchi is well-seasoned. This seasoning enhances the umami flavor of the dish.
Step 4
Trim the stems off the green chili peppers and slice them diagonally into thin pieces. If you prefer, you can substitute or add julienned cucumber. (For this recipe, we’ve used chili peppers for a touch of heat, but feel free to adjust based on your preference.)
Step 5
In a serving bowl, arrange the prepared acorn jelly, seasoned kimchi, and sliced chili peppers. Pour the chilled (or slightly frozen) radish water kimchi broth generously over the ingredients. Serving it extra cold will enhance its refreshing qualities.
Step 6
Finally, sprinkle 0.5 Tbsp of toasted sesame seeds and shredded seaweed (if using) over the top. Mix everything together well before enjoying. This delightful acorn jelly soup offers a cool, clean taste that’s perfect for a warm day.
