Delicious Chicken Mayo Rice Balls Using Leftover Spicy Soy Chicken
Transform leftover spicy soy chicken wings and drumettes into delicious chicken mayo rice balls with this simple recipe. Perfect for a quick meal or a kid-friendly snack!
Main Ingredients- Leftover chicken (spicy soy sauce wings/drumettes) 7-8 pieces
- Warm white rice for 2 servings
Seasoning & Other Ingredients- Mayonnaise 2-3 Tbsp
- Oyster sauce 1 tsp
- Seaweed flakes (Gim) about 1 handful
- Salt 1 pinch
- Olive oil 1/2 Tbsp
- Parsley flakes a little

Cooking Instructions
Step 1
First, prepare the leftover spicy soy sauce chicken wings and drumettes that your children found too spicy. If you don’t have spicy chicken, feel free to use plain fried chicken or regular seasoned chicken – it will still make excellent chicken mayo rice balls. Don’t let that leftover chicken go to waste; give it a delicious makeover!
Step 2
Carefully remove the bones from the leftover chicken and separate the meat. Lightly coat a pan with 1/2 Tbsp of olive oil and heat over medium-low heat. Add the chicken meat and stir-fry gently for about 1-2 minutes. This process warms the chicken, making it more tender and flavorful.
Step 3
In a large bowl, combine the warm white rice for 2 servings. Add the stir-fried chicken meat you just prepared. Using kitchen scissors, finely chop the chicken into small pieces for easier mixing and a pleasant texture in the rice balls.

To the bowl of rice and chicken, add a sprinkle of parsley flakes, a pinch of salt, and 2-3 Tbsp of mayonnaise. You can adjust the amount of mayonnaise to your preference for a creamier and richer taste.

Add about a handful of seaweed flakes (gim). Gently mix everything together until well combined. Press down slightly as you mix to ensure the ingredients meld together beautifully. Taste the mixture; if it needs a little more savory depth, add 1 tsp of oyster sauce.

And just like that, the once-spicy leftover chicken has transformed into delicious and creamy chicken mayo rice balls! Even your child, who couldn’t eat the spicy chicken, absolutely loved these. They make a wonderfully satisfying and simple meal.
