When making baby food chicken cubes and broth, I prefer to buy a whole chicken from my regular butcher. From a whole chicken, I separate the breast and tenderloin for baby food, and ask for the rest to be prepared for stir-fries. If you ask for just the breast or tenderloin, you get a precious 300g portion for about 5,000 won. However, a whole chicken is only 8,000 won! That’s why I just pay the extra 3,000 won for the whole chicken. This method allows you to make fresh, delicious chicken cubes and broth easily.

Main Ingredients

  • 350g Chicken meat (breast or tenderloin)

Broth Ingredients

  • 1/2 stalk Green onion
  • 1/2 Onion
  • 10 Dried shiitake mushrooms
  • 1/2 Carrot
  • 3000ml Water
  • 50ml Formula (or 50ml water)

Cooking Instructions

Step 1

Trim the chicken tenderloin or breast meat into bite-sized pieces. Thoroughly remove any sinew, fat, or blood clots. Soak the prepared chicken in a milk solution (50ml water mixed with 50ml formula) for about 30 minutes to effectively eliminate any gamey odor. (If you tell your butcher you’re using it for baby food, they can often help with removing excess fat and sinew.)

Prepare the broth ingredients: wash and clean the green onion, onion, dried shiitake mushrooms, and carrot. Gently rinse the dried shiitake mushrooms under running water to remove any dust.

In a large, deep pot, add the trimmed chicken and all the prepared broth vegetables. Pour in approximately 3,000ml of water, ensuring all ingredients are submerged.

Bring the pot to a boil over high heat. Once it reaches a rolling boil, reduce the heat to medium-low and let it simmer for another hour. Skim off any foam or impurities that rise to the surface during cooking; this will result in a clearer, cleaner broth.

After simmering for an hour, carefully remove the chicken from the pot and let it cool slightly. Once cooled enough to handle, use an immersion blender to purée the chicken until smooth. Spoon the chicken purée into baby food cube molds and refrigerate or freeze. These chicken cubes will be a convenient addition to your baby’s meals.

Remove the cooked vegetables from the pot. Strain the broth through a fine-mesh sieve or cheesecloth for a perfectly clear liquid. Pour the strained broth into baby food storage bags or ice cube trays and freeze. This homemade broth can be used to add flavor and nutrition to your baby’s meals whenever needed.
