  • Well-fermented Napa Cabbage Kimchi 350-400g (approx. 2 cups)
  • Canned Chicken Breast 2 cans (100g each)
  • Scallion (Green Onion) a little

Seasoning

  • Gochugaru (Korean chili powder) 1 Tbsp
  • Minced Garlic 1 tsp
  • Sugar 1.5 Tbsp (adjust based on kimchi’s sourness)
  • All-purpose Soy Sauce or Regular Soy Sauce 2 Tbsp
  • Perilla Oil (Deulgireum) 1 Tbsp
  • Sesame Seeds a little

Cooking Instructions

First, prepare the well-fermented Napa cabbage kimchi. If the kimchi pieces are too large, cut them into bite-sized pieces (about 2-3 cm wide).

Open the canned chicken breast and drain out the liquid or oil inside. You can lightly break up the chicken breast with a fork if desired.

In a bowl, combine the cut kimchi and prepared chicken breast. Add all the seasoning ingredients: 1 Tbsp Gochugaru, 1 tsp minced garlic, 1.5 Tbsp sugar, 2 Tbsp soy sauce, and 1 Tbsp perilla oil. Mix well by hand, gently squeezing the ingredients together. It’s important to adjust the amount of sugar based on the kimchi’s acidity to achieve the perfect balance.

Heat a pan over high heat. Add the seasoned kimchi and chicken breast and begin stir-frying. Pour in half a cup of water (about 100ml) while stir-frying. This will help prevent the kimchi from burning and keep it moist.

Reduce the heat to medium and continue to stir-fry for about 10 minutes, or until the kimchi and chicken breast are well combined and the liquid has slightly reduced.
