- Store-bought Inari Sushi Kit (rice seasoning included)
- 2 bowls of warm cooked rice
- 1 can of chicken breast
- 5 perilla leaves (jaengban-style pickled or fresh)
- 2 tablespoons mayonnaise
- 1 tablespoon plum extract (maesilcheong)
Cooking Instructions
Step 1
Drain the chicken breast from the can and rinse it briefly under hot running water to remove excess oil and saltiness. Pat it thoroughly dry with paper towels. This step helps eliminate any unpleasant odor from the chicken and ensures a cleaner taste.
Step 2
Finely shred the pickled perilla leaves. If using fresh perilla leaves, wash them, pat them dry, and then finely shred them. In a bowl, combine the shredded perilla (or pickled perilla) with 2 tablespoons of mayonnaise and 1 tablespoon of plum extract. Gently mix in the prepared chicken breast until well combined. The sweet and tangy flavor of the pickled perilla perfectly complements the chicken. For variation, you can also finely chop pickled onions or dill pickles and add them for a delightful crunch and added flavor.
