Main Ingredients- Dried Shredded Squid (Jinmichae) 150g
Seasoning Ingredients- Soy Sauce 2 Tbsp
- Cooking Wine (Mirin, etc.) 2 Tbsp
- Oligosaccharide 2 Tbsp
- Mayonnaise 1 Tbsp
- Sesame Oil 1 Tbsp

Cooking Instructions
Step 1
First, if your dried shredded squid is clumped together, gently pull it apart with your hands to loosen it. This helps the seasoning coat evenly.

Lightly grease a heated pan with olive oil. Over medium-low heat, add the dried shredded squid. Gently stir-fry it, lifting and dropping it with your hands, until it becomes slightly curly and wavy. This step helps eliminate any fishy odor from the squid and adds a nutty flavor.
Step 3
Transfer the curly, stir-fried dried shredded squid to a separate bowl. Doing this prevents the squid from clumping together when you add the sauce, ensuring a tender result.

Now, let’s make the sauce. In the same pan used for stir-frying the squid, combine soy sauce (2 Tbsp), oligosaccharide (2 Tbsp), cooking wine (2 Tbsp), and mayonnaise (1 Tbsp). Bring this mixture to a simmer over medium-low heat. Adding mayonnaise makes the sauce smoother and gives it a glossy, appealing finish.
Step 5
Once the sauce is bubbling, return the stir-fried dried shredded squid to the pan. Reduce the heat to low.
