Special Sweet Potato Glutinous Rice Donuts
A delightful snack that perfectly balances the soft sweetness of sweet potatoes with the chewy texture of glutinous rice flour. These donuts are best enjoyed warm, fresh from the fryer, with a comforting coating of sugar and cinnamon.
Donut Dough Ingredients- 200g steamed sweet potato (about 1 medium)
- 1 Tbsp sugar (adjust to sweet potato’s sweetness)
- 100g glutinous rice flour
- 0.2 tsp salt (approx. a pinch)
- 0.2 tsp cinnamon powder (adjust to taste)
Coating Sugar- 4 Tbsp sugar
- 0.2 tsp cinnamon powder (adjust to taste)
- 4 Tbsp sugar
- 0.2 tsp cinnamon powder (adjust to taste)
Cooking Instructions
Step 1
First, steam the sweet potatoes until they are tender. Place them in a steamer and cook for about 20-30 minutes, or until a fork can easily pierce them.
Step 2
Prepare 200g of the steamed sweet potato. It’s much easier to mash them while they are still warm. Use a fork or a masher to mash the sweet potato until smooth, though a few small lumps are perfectly fine and can add a nice texture.
Step 3
In a bowl, combine the mashed sweet potato with 100g of glutinous rice flour, 1 Tbsp sugar, 0.2 tsp salt, and 0.2 tsp cinnamon powder. Put on disposable gloves and knead the ingredients together until a dough forms. If your sweet potato is already very sweet, you can reduce or omit the sugar. A little salt enhances the overall sweetness.
Step 4
It’s important to get the dough consistency right. If the dough is too sticky, gradually add more glutinous rice flour. If it’s too dry, add a little more mashed sweet potato or a tiny bit of water. The dough should be smooth and not stick excessively to your hands. Don’t worry too much about precise measurements; adjust based on the dough’s feel.
Step 5
Take a portion of the dough and roll it into a ball, then gently press the center to form a donut shape. Feel free to add a small cube of cheese or red bean paste inside before shaping for an extra special treat. (Example: Flatten a dough ball, place a cheese cube in the center, then close the dough around it and shape into a donut.)
Step 6
Heat enough cooking oil in a pot to about 170°C (340°F). To test the oil temperature, drop a small piece of dough; it should sizzle and float to the surface immediately. Carefully add the shaped donuts to the hot oil and fry until golden brown on both sides.
Step 7
Be careful not to let the oil get too hot, as the outside could burn before the inside is cooked. Maintain a medium-low heat throughout the frying process. Use kitchen tongs or chopsticks to gently turn the donuts, ensuring they cook evenly. They are ready when they turn a beautiful golden-brown color.
Step 8
Once fried, place the donuts on a paper towel-lined plate to drain excess oil. In a separate shallow bowl, mix 4 Tbsp sugar with 0.2 tsp cinnamon powder. While the donuts are still warm, roll them in the sugar-cinnamon mixture until evenly coated.
Step 9
Enjoy your delicious, homemade Sweet Potato Glutinous Rice Donuts! The combination of a crispy exterior, chewy interior, sweet potato flavor, and cinnamon aroma is simply irresistible.
