Basic Dough Ingredients- 90g unsalted butter
- 50g brown sugar
- 30g granulated sugar
- 1 egg (room temperature, removed from fridge 1 hour prior)
- 2-3 drops vanilla extract or oil
- 140g all-purpose flour
- 1 pinch salt (approx. 0.5g)
- 2g baking powder
Cooking Instructions
Step 1
First, prepare 90g of butter. You can melt the butter gently in the microwave for about 30 seconds to 1 minute, or use a double boiler by placing a bowl over simmering water. Stir until the butter is completely melted and smooth.
Step 2
Add 50g of brown sugar and 30g of granulated sugar to the melted butter. Use a whisk or spatula to mix well until the sugar is incorporated and the mixture becomes creamy. It’s best if the sugar crystals are partially dissolved, creating a smooth texture.
Step 3
Prepare 1 egg that has been at room temperature for at least 1 hour (not cold). Whisk the egg lightly. Gradually add the whisked egg to the butter-sugar mixture in 2-3 additions, mixing well after each addition. Adding a cold egg all at once can cause the mixture to separate, so be mindful of this. Finally, add 2-3 drops of vanilla extract (or oil) for a lovely aroma.
Step 4
Now it’s time to add the dry ingredients. Sift 140g of all-purpose flour, a pinch of salt, and 2g of baking powder together into the bowl with the wet ingredients. Sifting helps break up any lumps in the flour and incorporates air, leading to a softer cookie.

Add the sifted dry ingredients to the dough. Using a spatula or scraper, gently mix using a ’11’ motion (cutting through the dough). Avoid overmixing, as this can make the cookies tough. Mix just until you no longer see streaks of flour, ensuring the dry ingredients are incorporated without overworking the dough.

Prepare 8 Oreo cookies for the dough. Placing the Oreos in a zip-top bag and crushing them with a rolling pin or bottle is a convenient method. Crushing them into moderately sized pieces, rather than powder, will provide a more pleasant texture.
