Dough (Makes 10 Balls)

  • 170g glutinous rice flour
  • 30g sugar
  • 30g all-purpose flour
  • 2g baking powder (1 tsp)
  • 70-90g hot water

Filling

  • 30g cream cheese
  • 100g mozzarella cheese
  • 15g sugar

Cooking Instructions

Step 1

First, in a mixing bowl, combine all the dry ingredients: glutinous rice flour, sugar, all-purpose flour, and baking powder. For a smoother dough, consider sifting the dry ingredients beforehand. Gradually add the hot water, starting with 70g, while mixing with a spatula or your hands. The dough should not be too sticky or too dry; it should hold together when you form a ball. Adjust the amount of hot water as needed.

Step 1

Step 2

Cover the bowl with the dough with plastic wrap to prevent it from drying out. Let the dough rest and mature at room temperature for 20 to 30 minutes. This resting period will make the dough softer and easier to handle.

Step 2

Step 3

While the dough is resting, let’s prepare the delicious cheese filling. In a separate bowl, combine the 30g of cream cheese with 15g of sugar. Mix thoroughly with a spatula or fork until the sugar is completely dissolved into the cream cheese, creating a smooth filling.

Step 3

Step 4

Divide the rested dough into 10 equal portions (approximately 50g each). Flatten each portion of dough into a disc, then press the center to create an indentation for the filling. Spoon in your prepared cream cheese mixture and 100g of mozzarella cheese. Carefully enclose the filling with the dough, pinching the edges securely to seal. Gently roll the dough into a smooth ball. Ensuring a good shape now will result in beautifully fried cheese balls.

Step 4

Step 5

Now it’s time to fry the cheese balls! Pour enough oil into a pot to fully submerge the cheese balls (about 170-180°C or 338-356°F). You can test the oil temperature by inserting a wooden chopstick; if bubbles form around it, the oil is ready. Carefully place the cheese balls into the hot oil, ensuring they have space between them to prevent sticking. Once the cheese balls sink and then float to the surface, gently turn them with chopsticks or a slotted spoon to ensure even browning.

Step 5

Step 6

When the cheese balls turn a beautiful golden brown color, remove them from the oil using a slotted spoon. Drain them on paper towels or a wire rack to absorb any excess oil. While they are delicious when hot, letting them cool slightly will enhance their crispy exterior and chewy interior texture.

Step 6

Step 7

Enjoy your cheese balls warm, or for an extra touch of sweetness, sprinkle them with sugar! These homemade glutinous rice cheese balls boast a delightful crispy shell and a gooey, chewy cheese center. They make a perfect treat for a cozy afternoon at home or a delightful snack for kids!
