  • A pinch of toasted sesame seeds

  • 3 Tbsp soy sauce
  • 2.5 Tbsp rice syrup (or oligodang)
  • 1/2 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1 cup water (200ml)

Cooking Instructions

Peel the lotus root and slice it into thin rounds, about 0.3cm thick. Blanch the sliced lotus root in boiling water for just 30 seconds. This short blanching helps retain its crisp texture.

Rinse the blanched lotus root under cold running water. This step is crucial to wash away excess starch, ensuring a clean and non-sticky braised dish.

Combine all the seasoning ingredients in a pot: soy sauce, rice syrup, sugar, minced garlic, and 1 cup of water. Stir well to mix. Add the blanched and rinsed lotus root to the pot.

Bring the mixture to a boil over high heat. Once it starts boiling, immediately reduce the heat to low. Simmer gently, spooning the sauce over the lotus root frequently and stirring occasionally. This ensures the lotus root absorbs the flavors evenly. Continue simmering for about 15-20 minutes.

When the sauce has reduced by about half and the lotus root is nearly cooked, increase the heat back to medium-high. Let it bubble and cook for a few minutes. This final high-heat simmer will give the lotus root a beautiful glossy finish.
