Today, we’re making a delicious, spicy, and sweet stir-fried dish using special semi-dried squid I received as a gift! Its chewy texture and rich flavor will surely liven up your mealtime.

The semi-dried squid I received was already nicely cleaned, so there’s very little prep needed. You just need to remove the transparent quill from inside the squid body. Once that’s done, your squid is ready to cook!

Since the squid I’m using are small, I’m preparing 3 of them. Briefly rinse them under running water. Then, to help the sauce penetrate, make diamond-shaped scores all over the squid bodies. Cut them into bite-sized pieces (about 2-3 cm). Also, prepare your vegetables by cutting them into pieces roughly the length of your finger.

Scoring the squid allows the sauce to soak in better, resulting in a deeper flavor. Cut the vegetables into similar bite-sized pieces. For example, slice the onion, cabbage, and carrot into strips, slice the leek diagonally, and finely chop the green chili pepper.

Heat a wide pan over medium heat and add a generous amount of cooking oil. Once the oil is warm, add the prepared vegetables (onion, cabbage, carrot) first and stir-fry until they are slightly softened and fragrant. Cooking over medium heat prevents the vegetables from burning and ensures they cook nicely.

Once the vegetables are lightly stir-fried, add all the pre-mixed sauce ingredients (2 Tbsp gochujang, 1 tsp gochugaru, 1 tsp soy sauce, 1 tsp sugar, 1/2 tsp minced garlic, 1 tsp sesame seeds). Also, add the leeks, green chili pepper, and the tteokbokki rice cakes for an extra chewy texture, then stir-fry everything together.

Now, use a spatula or chopsticks to mix everything thoroughly and stir-fry until the ingredients and sauce are well combined. Keep an eye on the heat to prevent the sauce from burning, and stir-fry to allow the sweetness of the vegetables and the umami of the squid to harmonize beautifully.

When the vegetables are about two-thirds cooked and starting to soften, add the prepared semi-dried squid to the pan and stir-fry together. Squid can become tough if overcooked, so add it when the vegetables are almost done and stir-fry for just 1-2 minutes. The key is to maintain the squid’s chewy texture!

Once all ingredients are well combined and the squid is cooked perfectly, sprinkle some sesame seeds on top to finish. Your delicious semi-dried squid stir-fry, looking and tasting amazing, is now complete! Serve it over warm rice for an exceptional meal.
