How to Make Delicious Stir-Fried Enoki Mushrooms
I went to the market today and found 3 packs of enoki mushrooms for just 1000 won! I couldn’t miss this deal, so I decided to make a stir-fried enoki mushroom dish. It’s simple yet packed with texture and flavor, perfect as a side dish for rice or even a snack with drinks!
Main Ingredients- 3 packs Enoki mushrooms (approx. 300g)
- 1 medium Eggplant
- 3 stalks Green onions (white parts mainly)
- 2 Eggs
Cooking Instructions
Step 1
First, trim the base of the enoki mushrooms and separate them into individual strands. Wash the eggplant thoroughly and slice it into 0.5cm thick half-moons. Cut the green onions into 5cm lengths, focusing on the white parts.
Step 2
Heat a generous amount of cooking oil in a pan over medium heat. Once the pan is hot, add the prepared enoki mushrooms, eggplant, and green onions. Stir-fry until the vegetables are slightly softened. Reduce the heat slightly when moisture starts to release from the vegetables.
Step 3
Once the vegetables are partially cooked, push them to one side of the pan. Crack the 2 eggs into the empty space. As the eggs begin to cook, gently stir them with chopsticks or a spatula to create scrambled eggs. (Alternatively, you can whisk the eggs and stir-fry them with the vegetables, according to your preference!)
Step 4
Combine the scrambled eggs with the stir-fried vegetables. Pour the 7 Tbsp of soy sauce along the edge of the pan. Stir-fry quickly over high heat to ensure the soy sauce coats all the ingredients evenly. Your delicious stir-fried enoki mushroom dish is ready! Serve it over warm rice for a delightful meal.
