Main Ingredients- Dried old pumpkin strips 300g
- A little bit of chili threads (silgochu)
Seasoning Ingredients- 1/2 Tbsp minced garlic
- 2 Tbsp soy sauce
- 1 pinch salt
- A little celery powder or parsley powder
- A little sesame oil
- 2 Tbsp sesame seeds (ground or whole)

Cooking Instructions
Step 1
First, prepare the dried old pumpkin strips.

Soak the dried old pumpkin strips in cold water for about 10 minutes until they become pliable. After soaking, squeeze out as much water as possible with your hands.

In a bowl, combine the squeezed pumpkin strips with 1/2 Tbsp minced garlic, 2 Tbsp soy sauce, 2 Tbsp sesame seeds, a little celery or parsley powder, and a little sesame oil. (Tip: Celery or parsley powder helps to neutralize the distinct aroma of old pumpkin, enhancing the flavor. You can omit it if you don’t have it.)

Gently mix the ingredients with your hands until all the seasonings are evenly distributed throughout the pumpkin strips. (Tip: Taste and add an additional pinch of salt if needed to adjust the seasoning.)

Heat a pan over medium-high heat. Add the seasoned pumpkin strips and stir-fry quickly for about 3 minutes. Avoid overcooking, as it can make the texture mushy. Quick stir-frying is key to maintaining its chewy texture.

Finally, add a small amount of chili threads and mix them in. Turn off the heat immediately. Your delicious stir-fried dried old pumpkin is ready!
